Egg & Veggie Mini Frittatas

Ingredients:

  • 6 large eggs

  • 4 egg whites

  • ½ cup chopped spinach

  • ½ cup diced bell peppers

  • ¼ cup diced onion

  • ½ cup shredded cheese

  • Salt & pepper to taste

Instructions:

  1. Preheat oven to 350°F. Grease muffin tin.

  2. Whisk eggs and egg whites.

  3. Stir in veggies, cheese, salt, and pepper.

  4. Divide evenly into muffin cups.

  5. Bake 18–20 min, until set.
