Egg & Veggie Mini Frittatas
Ingredients:
6 large eggs
4 egg whites
½ cup chopped spinach
½ cup diced bell peppers
¼ cup diced onion
½ cup shredded cheese
Salt & pepper to taste
Instructions:
Preheat oven to 350°F. Grease muffin tin.
Whisk eggs and egg whites.
Stir in veggies, cheese, salt, and pepper.
Divide evenly into muffin cups.
Bake 18–20 min, until set.
