Zucchini Noodles with Pesto and Shrimp

Ingredients:

  • 1 medium zucchini, spiraled

  • 4 oz cooked shrimp

  • 1 tbsp avocado oil

  • 2 tbsp fresh basil

  • 1 tbsp pine nuts or sunflower seeds

  • 1 clove garlic

  • 1 tbsp Parmesan cheese

  • Salt and pepper to taste

Instructions:

Blend basil, pine nuts, garlic, Parmesan, and avocado oil to make pesto.

Sauté zucchini noodles in a skillet with a little oil for 2-3 minutes.

Add shrimp and toss with the pesto until heated through.

  • Serve immediately.
