Herb-Crusted Cod with Roasted Veggies

Ingredients:

  • 6 oz cod fillet

  • 1 tbsp avocado oil

  • 1 tbsp parsley, chopped

  • 1 tsp thyme, chopped

  • 1 tsp turmeric

  • 1/2 cup broccoli florets

  • 1/2 cup Brussels sprouts, halved

Instructions:

Preheat oven to 400°F (200°C).

Coat cod with avocado oil, parsley, thyme, turmeric, salt, and pepper.

Arrange cod and veggies on a baking sheet; drizzle veggies with oil and season.

  • Roast for 15-20 minutes, flipping veggies halfway through.
