Roasted Mackerel with Beet Greens
Ingredients:
6 oz mackerel fillet
1 tbsp avocado oil
1/2 tsp turmeric
1 cup beet greens
1 clove garlic, minced
Instructions:
Preheat oven to 400°F (200°C).
Coat mackerel with oil and turmeric; bake for 12-15 minutes.
Sauté beet greens with garlic in avocado oil for 2-3 minutes.
Serve fish on top of the greens.
