Roasted Mackerel with Beet Greens

Ingredients:

  • 6 oz mackerel fillet

  • 1 tbsp avocado oil

  • 1/2 tsp turmeric

  • 1 cup beet greens

  • 1 clove garlic, minced

Instructions:

Preheat oven to 400°F (200°C).

Coat mackerel with oil and turmeric; bake for 12-15 minutes.

Sauté beet greens with garlic in avocado oil for 2-3 minutes.

  • Serve fish on top of the greens.
