Turkey-Stuffed Bell Peppers

Ingredients:

  • 1 large bell pepper

  • 4 oz ground turkey

  • 1 tbsp avocado oil

  • 1/4 cup onion, chopped

  • 1/4 cup tomatoes, diced

  • 1 tsp oregano

  • 1 tbsp pumpkin seeds

  • Salt and pepper to taste

Instructions:

Preheat oven to 375°F (190°C).

Cut the top off the bell pepper and remove seeds.

Sauté turkey, onion, and tomatoes in avocado oil; season with oregano, salt, and pepper.

Stuff the mixture into the bell pepper, sprinkle with pumpkin seeds, and bake for 20 minutes.

  • Serve warm.
